Schiacciunta (Recipes Elbane)
Ingredients: 3 eggs, 300 g of flour, 300 g of sugar, 100 g of lard, a pinch of yeast or a teaspoon of baking soda, grated lemon zest.
Preparation of the Schiacciunta: beat the eggs, sugar, lard, yeast and lemon zest in a bowl. To facilitate this process it is good to use your hands and not the whip as some mistakenly do.
The heat of the hands is useful for melting the lard, also favoring a further oxygenation of the dough and facilitating the incorporation of the flour which must take place gradually until a nice smooth and homogeneous dough is obtained.
Grease and flour a rectangular pan, pour the dough into it. Bake at 180 ° for about ¾ of an hour and sprinkle with granulated sugar before serving
