Castagnaccio is one of the protagonists of the Poggio chestnut party and of the week of meetings and events dedicated to the fruit which was once the main resource of the Terre di Marciana.
The ladies of the town prepare dozens of trays of the tasty dessert for you to taste to the guests who arrive in Poggio and Marciana on Sunday.
Mrs. Angela revealed to us the Pucinca recipe for castagnaccio according to tradition.
Castagnaccio recipe: chestnut flour, almonds, pine nuts and raisins
You take the chestnut flour, put it in a bowl, add a little water, mix it well with the machine and make this dough.
Then you add a little bit of sugar and a little bit of salt just enough, the mixture obtained must have a consistency that is neither too firm nor too liquid. Afterwards, add: almonds, pine nuts, raisins to the bowl with the mixture, a peel of peel is also fine of orange.
And finally you take the pan, grease it, pour the mixture in and put everything in the oven.
