The curtain rises at the Elba Agri-Food Supply Chain Fair, Flavors and Traditions of Elba an event in the calendar of Elba events dedicated to the production, transformation and administration of Elba products ‘Island.

Agricoltori, artigiani del gusto, viticoltori, allevatori, apicoltori, esperti, chef e ristoranti hanno risposto con entusiasmo all’appello del Comune di Capoliveri , che ha lanciato la prima edizione della Fiera della Filiera agroalimentare elbana “Sapori & Tradizioni”. Nata da un’idea di Peppe Puccini e dell’Associazione Amici di Penna, Arte e Musica, di cui è presidente, La Fiera ha visto il coinvolgimento operativo e l’indispensabile collaborazione della Pro Loco di Capoliveri e del suo Presidente Paolo Martino, che vantano una lunga esperienza nell’organizzare gli eventi capoliveresi come la Festa dell’Uva. L’Accademia Italiana della Cucina Delegazione Elba, fornirà il supporto tecnico-scientifico con i propri soci per garantire la qualità dei contenuti della festa, delle proposte culinarie, delle conferenze a tema. Rossana Galletti, Alvaro Claudi, Agostino Stefani ed altri Accademici saranno presenti sia al convegno del 30 aprile al Teatro Flamingo sul tema “Cultura contadina fra saperi e sapori” che fra coloro che giudicheranno le proposte dei ristoratori di Capoliveri e degli chef durante gli appuntamenti dedicati al cibo.

In the Villaggio del Gusto, tastings of products from Elba companies
In the Villaggio del Gusto, in Piazza Matteotti and Piazza Garibaldi, twenty-two Elba companies will offer tastings of their products. The winemakers present will be: Arrighi, Allori, La Faccenda, Villa Mori, Sapereta, Le Sughere, Le Ripalte, Battani. Two olive growers: Paolo Talucci and Podere Arduini. Elba beer, Conte Peria liqueurs and Elba liqueurs again for the drinks sector. Armando in Porto Azzurro for jams, Cremeria Gori for artisanal ice creams, Az. Agricola Castiglione for honey. Panificio il Cantuccio and Produzioni Artigianali Assapora will offer traditional yeasts and desserts. The Gardens of Poseidon and Biagio Giordano dello Schiopparello will present the agricultural products of the vegetable garden and orchard. There is no shortage of the dairy sector with the az. Elban cuisine dishes at special prices
During the three days the participating restaurateurs will offer some dishes of Elban cuisine at special prices in their restaurants: Al Calamita, La Lampara, il Vicoletto, I’ Pollaio dei flavors of Tuscany, Summertime, Macelleria Libero Bistrot, Da Tanio, KoKedama, Galileo 10, Da Franco, Freccia Azzurra, La Cantinetta, Binomio Natural Bistrot.
Three chefs for a cooking show with tasting

In the wake of the gastronomic proposal and the marathon among the Capoliveri restaurateurs throughout the event, on May 1st three chefs will perform in Piazza Matteotti for a show cooking with tasting: Andrea Negri will propose the Cuttlefish with chard, Mamba the Tagliolini with cuttlefish and artichokes and Davide D’Antonio the bonito with peas, broad beans, mint and borage.
Spaces dedicated to art and music
There will be no shortage of collateral but no less important moments dedicated to art and music. APAM, at its stand. will organize poetic readings and meetings with artists and musicians, while every evening, starting from 9pm, the Piazza will come alive with Fuoribordo, the Compagnia degli Scapestrati, and the music festival dedicated to DJ Riccardo Cioni.

The event and the program will be presented by Mayor Montagna and Councilor Luperini on April 29th at 6 pm in Piazza Matteotti during a round table hosted by the journalist Patrizia Lupi at which the organizers are invited to speak , producers, restaurateurs and guests of the Fair.
A festival for all of Elba

Mayor Montagna’s hope is that this Fair of Elban excellences can become the celebration of the whole of Elba, because each territory has characteristics that make it unique, also in the preparation of traditional recipes. The format will be proposed, as suggested by Montagna, by the coordination of the Elban Pro Loco, the GAT, Toscana Promozione Turistica, Vetrina Toscana and the local administrations to make it a traveling event in the various municipalities of the island.

The first day of the Elba Agri-Food Supply Chain Fair “Flavours & Traditions” took place on 29 April

The first day of the Flavors & Traditions of Elba Agri-Food Supply Chain Fair took place under the banner of passion and participation, opened in Capoliveri by the mayor Walter Montagna, which saw as protagonists the Elban producers and Capoliveri restaurateurs who spoke in the square their experiences by presenting their products and dishes. Clima di Festa, animated by the organizers of the event Peppe Puccini and Salvatore Esposito, President and advisor of the APAM Association; Paolo Martino and Lorenzo Puccini, President and councilor of the Pro Loco of Capoliveri; Patrizia Lupi journalist and director of the Elba Island Foundation; Felice Sapio, chef and producer of confectionery products and preserves from the island’s culinary tradition with the Assapora brand. Mayor Montagna, together with deputy mayor Leonardo Cardelli and councilor Daniele Luperini, gave all those present a certificate of participation with the hope of seeing Elba’s food and wine excellences increasingly represented in future editions of the Fair.
Gnudi with wild herbs, cod stew and Elba-style panzanella
According to the program, the jury – composed of Susy Macchioni, Patrizia Lupi, Felice Sapio, Salvatore Esposito and Francesco Leavelfari, who is also the official photographer of the Fair – visited some of the restaurants participating in the initiative: Macelleria Libero Bistrot with stewed rooster ; Kokedama with boiled octopus Granfia, bread and “good” oil; Natural Bistrot pairing with the Gnudi dish with wild herbs; The Cantinetta with the Cod Sburrita; From Tanio with Elba-style panzanella. A triumph of flavors and genuine cuisine which expressed in the dishes the quality of the raw materials used, passion for one’s craft and love for the territory and its traditions. An excellent business card for an island that has much to express both for the excellence of the products of the land, starting from those of the wine sector, and for the mastery in their processing to produce jams, marmalades, desserts, liqueurs, products dairy products, honey and derivatives. Unforgettable ingredients of a journey into taste where the beauty and hospitality of the island are combined with the composite knowledge of a community that has its roots in the centuries in the wake of the ancient Mediterranean routes. Behind the products of the agri-food chain and the dishes prepared by Elban chefs there is the story of people who dedicate time and heart to hospitality, attentive to the protection of the territory, to the story of the identity values of the Elban people, to conscious and emotional tourism, of which food is one of the main ingredients.
Elba of the Italian Academy of Cuisine
The second day of the Flavors and Traditions of Elba Fair, Tuesday 30 April, features the Elba Delegation of the Italian Academy of Cuisine, with the conference “Knowledge and flavors of Elba tradition” which will see Rossana Galletti, Alvaro Claudi on the stage of the Flamingo Theatre. , Isabella Zolfino, Gabriella Solari, Agostino Stefani and Patrizia Lupi to talk about the territory and its excellence in the agricultural and food and wine sectors. The program includes the opening of the stands with tasting starting from 3 pm, some collateral initiatives with theatrical performances, poetic roaming, music, tastings of the dishes presented by the restaurants with the Jury made up of AIC Academics.

Taste and Folklore at the Elba Agri-food Supply Chain Fair “Flavours & Traditions”
The second day of the Elba Agri-Food Supply Chain Fair “Flavours & Traditions” brought Elba producers to the streets to talk about their companies and let visitors, including numerous foreign tourists, taste the “Made in Elba” products. But not only that: some lovers of local traditions and folklore enlivened the day with theatrical performances, traditional music, poetic readings, show cooking and, above all, a round table organized by the Academy of Italian Cuisine on the theme “From the earth to the plate: knowledge and flavors of Elba”. Alvaro Claudi, Rossana Galletti, Antonio Arrighi and Agostino Stefani talked about it at the Flamingo Theatre. The event also saw the participation of Patrizia Lupi for the Elba Island Foundation, Gabriella Solari President of CAI and Franca Rosso, President of AssocomElba.
Fair with extensive programme
The Fair is a broad program dedicated to culture and historical re-enactments of which Capoliveri has been the protagonist for years, with its cultural events dedicated to the identity and history of the territory, such as the Quarryman’s, Grapes’, Pesce Povero and, in the past, also dell’Innamorata, masterfully organized by the Capoliveri Pro Loco, headed by Paolo Martino.

Square Matteotti stage of re-enactments
After the opening of the stands and the greetings of the Mayor Walter Montagna and the Councilor Daniele Luperini, who thanked both the organizers and the participants of the event for their commitment, Piazza Matteotti became the stage for the re-enactments with the Coro del Cavatore di Capoliveri, masterfully composed and directed by Pro Loco with Alberto Baldetti, Claudio Baldetti, Paolo Martino, Leonardo Dolera, Giuliano Conte, Antonio Candigliota, Guido Salvadori and the group’s mascots Andrea Castellani and Ziad Afram. Also on the same theme is the poem “Dedication to the Capoliveresi miners” by Bartolomeo Sestini recited by Salvatore Esposito. Subsequently, in Piazza Garibaldi, a representation of “La Compagnia dell’Allegria” staged the Easter custom of exchanging the Sportella and the Ceremito. The theater group is organized by the Rio Pro Loco chaired by Marinella Cecchini, and is made up of around fifteen actors including Isa Tonietti, Claudia Trombi, Federico Regini, directed by Fabiola Pisani. At the same time, in the same square, Andrea Esposito and Miriam Senatore, young members of the Apam Association, kneaded and cooked the two exquisite traditional desserts, which were then offered to visitors, thanks to the ovens made available by the ASAA company of Capoliveri. The poetic roaming continued during the marathon among the restaurants of Capoliveri with Peppe Puccini, president of APAM, artist and poet who recited poems, some of which he composed: “You are, poetry”, The Seasons of Capoliveri”, “Ancora qui “, “Spring Flower”. The jury, composed of the academics Rossana Galletti, Mario La Nera, Elena Scolari and Paolo Ghinolfi, Patrizia Lupi and Susy Macchioni, visited the restaurants: Il Vicoletto, I’ Pollaio dei Sapori Toscani, Freccia Azzurra and At Calamita da Michele who prepared and described some typical dishes, in line with the spirit of the Festival which wants to celebrate the traditions of Elba and testify to the restaurateurs’ commitment to passing them on, as well as offering the excellence and products of the territory.
A special thanks from the Administration and the Organizers of the Sapori e Tradizioni dell’Elba festival goes to Stefano “Stix” Regini and the Edicola Elbana Show who filmed all the phases of the event to obtain an audiovisual product which will be testimony and document for the promotion of the Fair. In fact, in Mayor Montagna’s intentions, the Fair deserves to become the heritage of the whole island, thanks also to the involvement of the Pro Loco and cultural associations which are custodians of Elba’s identity and culture. Haute cuisine for the closing of the “Flavours & Traditions” Fair
The third and final day of the Elba Agri-Food Supply Chain Fair “Sapori & Tradizioni” closed with “Chef in Piazza” which, despite the inclement weather, kept part of the program dedicated to flavors and knowledge on May 1st Elbans in the kitchen. Three top chefs tried their hand at preparing three dishes that the jury made up of Rossana Galletti, Mario La Nera, Patrizia Lupi, Daniela Bodechtel, Luigi De Strasser, Susy Macchioni and Salvatore Esposito wanted to reward ex aequo, both for the attention to preparation and the use of excellent local ingredients which guaranteed a mouth-watering final result.

Cuttlefish in zimino simple dish but with a unique flavour
Andrea Negri, chef of the Hotel Villa Ottone, tried his hand at a simple dish but with a unique and balanced flavour: “Cuttlefish in zimino” enhanced by the skilful use of wild chard and dandelion, flavored in cooking with Mediterranean herbs, starting from bay leaves, and seafood. The “spring” presentation is colorful with wildflowers.
Bonito with peas
Davide D’Antonio, owner of the Binomio Natural Bistrot in Capoliveri, but with an important career in Italian and foreign starred restaurants, prepared an exquisite bonito with peas, drawing inspiration from a recipe by Alvaro Claudi, revisited by adding broad beans, artichokes, mint and borage.
Tagliolini risotto with cuttlefish and artichokes
Felice Sapio, chef of the Hotel Rio and owner of the Assapora brand, which is dedicated to artisanal products from Elba, proposed a risotto tagliolini with cuttlefish and artichokes, with catmint, mint, toasted almonds and a sprinkling of parmesan, a perfect taste and in the presentation.
The chefs’ marathon was streamed by Edicola Elbana Show, always attentive to events that enhance the culture of the area, and can be reviewed on the broadcaster’s social channels.
Tastings from restaurants participating in the Fair
The jury subsequently continued the cycle of tastings of the restaurants participating in the Fair by visiting four other Capoliveri excellences.

Michelangelo Zamparelli’s Lampara proposed cuttlefish ink gnocchi with spider crab sauce, appreciated both for the quality of the home-prepared gnocchi and for the excellent sauce.
The first course was also based on spider crab, known on Elba as “margherita”, a tagliolino, prepared by Eleonora of the Ristorante da Franco: the spider crab is fragrant and generous on the plate and is one of the most appreciated traditional dishes also by tourists. And it couldn’t be otherwise: Eleonora is the daughter of the “Polpaio” Piero who followed and advised on the preparation of the octopus in the previous days at the Kokedama restaurant.
How much appreciated was the warm welcome from Franco who hosted the chefs’ test on his veranda where it was possible to taste the unsurpassed ice creams of Cremeria Gori.
The young Mario Caldo, son of an artist – his father is Michele and the owner of the Da Calamita restaurant – presented a triptych in the name of Elban cuisine in his restaurant, Galileo 10: stuffed mussels, stuffed calamari and cod with potatoes . The beautiful presentation is elegant and the research for recipes from the past is passionate, very current and well interpreted.
Summertime, with chef Mylo, won over the jury with a superlative grilled fish that was “poor” but very tasty and very fresh: the quality of the raw materials was excellent and the cooking was spot on, maintaining all the flavor of the sea of the fish strictly at km0.
Musical and poetic interludes
The visit to the restaurants was accompanied by musical and poetic interludes with the performance, applauded by the patrons present, by Giuseppe “Peppe” Puccini known as Il Peta. The creative soul of the town was also shared by Salvatore Esposito who, together with Peppe and Rocco Bonifacio, are the passionate animators of the Amici di Penna, Arte e Musica-APAM Association, which conceived and organized the event.
